01. Grind the speculoos’ biscuits finely using a chopper.

02. In a deep bowl, combine the finely ground speculoos biscuits with milk gradually, ensuring thorough mixing. Note that the absorption of milk may vary among biscuits.

03. Place a sheet of cling film on your workstation. Spoon the speculoos dough onto it and cover it with baking paper. Use a rolling pin to flatten the dough to a 35×35 cm size.

04. In another deep bowl, mix mascarpone with sugar, vanilla sugar, and whipping fix. Gradually add the unwhipped cream, mixing until firm peaks form.

05. Spread the cream evenly over the flattened speculoos dough, reserving some for garnish.

06. Roll the cookie dough tightly, using the cling film as a guide. Wrap it tightly and refrigerate to set.

07. Heat speculoos spread in a saucepan until liquid. Stir constantly.
